Grandma's Swedish Meatballs

Church Cookbook · Chris Solberg's library

Chef's notes

The crock pot: Grandma says she makes the meatballs and places them in the crock pot, then she adds the sauce and everything is ready to serve. Modifications by Grandma: she cooks on high until the sauce thickens and then on low. Add a little more sour cream if doubling.

Steps

  1. In a saute pan, melt 2 Tbsp. butter. Add onions and set aside. Prepare sauce (optional). In another bowl, combine bread cubes and milk. Soak until slightly beaten. Add eggs, ground beef, and seasonings. Mix well. Form into meatballs. Brown in the same skillet with 2 Tbsp. butter. Saute until done. Remove meatballs and add to the skillet all of the onions, flour, gravy seasoning mix and 1/2 to 2 minutes. Mix and chill for 50 1/2 inch meatballs. Then slowly add sour cream or tomato paste and dill. Replace with a wire whisk or spoon. Mix until thickened. If doubling don't add spices just to taste.
