Chipped Beef on Toast

Solberg Family Recipes · Chris Solberg's library

Steps

  1. Place 3 cups milk in a heavy sauce pan. Add salt and pepper to taste and 1/2 to 3/4 stick of butter. Heat on low to medium heat, careful that the milk does not burn onto the bottom of the pan.
  2. While the milk is heating, cut up one to two small pkgs. of dried beef, and prepare the thickening. To thicken the milk, place about 1 cup of milk in a gravy shaker. Add enough flour so the shaken mixture is thick but will still pour. When the milk is almost ready to boil (do not let it boil) stir the flour and water mixture into the milk until the milk is thickened to your liking.
  3. Turn the heat down so the milk stays hot but will not simmer. Add the dried beef and heat until the beef is hot. Serve over toast with frozen peas.
  4. This recipe is also good using canned tuna instead of dried beef.
