Zucchini Bread

Steps

Mix all ingredients together. Makes two standard loaves. Bake at 325 for 1 1/2 hours or until a pick comes out clean.
If small loaf pan, use 1 cup batter - bake for 45 minutes
If large load pan, use 3 cups batter - bake for 45 minutes

2 1/2 cups sugar (use brown for 1/2)
(alternatively, 1/2 cup white sugar + 1/2 cup brown sugar)
1 cup oil (or applesauce)
3 eggs
2 cups grated zucchini
3 tsp. vanilla
3 cups flour
1 tsp. salt
1/4 heaping tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1/2 cup chopped nuts
